Coleslaw is the perfect side dish for an outdoor Summer party, or just the perfect side dish.

1 white cabbage
2 carrots
2 sticks celery
4 spring onions
200 g mayonnaise
4 TBS (2 oz.) buttermilk
2 TBS (1 oz.) maple syrup
2 tsp apple cider vinegar
A handful, or two, pecans (chopped)
salt (to taste)
pepper (to taste)

1. Shred cabbage, carrots, celery, and spring onions. Put them all together in a large bowl.

2. Make the dressing. In another bowl, whisk mayonnaise, buttermilk, maple syrup, and apple cider vinegar. Pour dressing over vegetable mix, and toss.

3. Season with salt and pepper. Topped with chopped pecans.

Soda Gembira (Happy Soda)

Soda Gembira (translated as happy soda) is probably one of Indonesia’s most famous mocktails.

There are several ways of making happy soda.

1 can strawberry soda
1/2 cup ice cubes (or to your preference)
1/4 cup sweetened condensed milk

1 can club soda/sprite
1/2 cup ice (or to your preference)
1/4 cup sweetened condensed milk
2 – 4 TBS strawberry syrup.

Mix everything in a glass and enjoy!

Peach Risotto

One of the reasons why we love Summer is the huge variety of fruits that are in season! One of them, and one of our favorites, is peach.

This dessert risotto, that can be enjoyed either by yourself, or share it with your special one.

1 ripe peach, halved
1 cup milk
1 cup cream
1/2 cup risotto rice
1/2 cup moscato wine
1 TBS caster sugar
1″ cinnamon stick
1/2 TBS butter
1/2 vanilla pods
1 tsp lemon zest
Juice 1/4 lemon
Dark chocolate
1 handful fresh mint, leaves picked

serves 1 – 2

1. In a small pot, put halved peaches, 2 tsp of caster sugar, cinnamon, lemon zest, lemon juice, 1/4 cup moscatto. Simmer until peaches are soft (about 10 minutes). Remove and set aside.

2. Meanwhile. melt half of the butter, score vanilla pods and scrape the seeds. Add seeds to butter. Cook for a few seconds to one minute, then add rice and remaining sugar, turn heat to medium. Stir. Pour in the remaining moscatto, stir until moscatto is reduced. Add milk and cream slowly. Simmer, and stir often.

3. When rice is soft, add the remaining butter ,liquid from peach. Stir, and cover for a few minutes.

4. Remove skins and stones from peaches, chop.

5. Spoon risotto to plate, put chocolate and chopped peaches.

Super Salad

This time of year is an excellent time to start eating more greens in your diet. We’ll show you what you can do to boost your salad, and a homemade dressing packed with antioxidant.

Mixed greens
1 carrot, shredded
1/2 ripe avocado sliced
1/2 apple, sliced
a handful strawberries, halved
handful of blueberries

1/4 heaping cups blueberries
1 tsp ginger powder
2 TBS acai juice
2 tbsp apple cider vinegar
1 tbsp maple syrup
a splash of water
1/4 cup extra virgin olive oil
salt + pepper

½ TBS sunflower seeds
½ TBS flax seeds
½ RBS chia seeds
½ TBS hemp seeds

1. Mix salad ingredients in a large bowl

2. Make the dressing: Combine all of the ingredients in a blender and blend on high until you have a creamy and unified mixture. Check for seasoning and sweetness, adjust and set aside.

3. Arrange the greens. Top the greens carrots, avocado, apple, strawberries, and blueberries. Stir the dressing (it should have thickened a bit) and drizzle it all over the top and garnish the salad with the seeds sprinkle.
