Have you had one of those days where you wanted something sweet and savory at the same time?
Well it happened to me this morning. I wanted a pumpkiny breakfast. But I want something savory as well. Like…. BACON!!!! And of course with the weather being super cold, I wasn’t really in the mood to just take something out of the fridge and eat it (like my overnight breakfasts). So I decided on something…. I like pumpkin. I like bacon. So why not mix them together? Pumpkin bacon soup!
2 tbs bacon fat
1 small onion, chopped
1 clove garlic, minced
2 cups pumpkin puree
1/4 cup vegetable broth
Fresh ground salt and pepper
A slice of ciabatta, roughly chopped/torn
1. Pre-heat bacon fat in a non-stick skillet.
2. Sauté onions until translucent. Add in garlic. Cook until fragrant, and sprinkle with salt and pepper.
3. Add the pumpkin puree and broth gradually. Bring it to a boil, and reduce heat to a simmer. Cook for about 20-30 minutes. Until the liquid is reduced and soup is nice and creamy.
4. Meanwhile, sauté bread in 1 tbs bacon fat until bread pieces begin to color and crisp.
