I’ve been seeing this kind of recipe online. This cake oatmeal, that pie oatmeal. And then I came across carrot cake oatmeal. I thought to myself, “Huh! It’s a weird combination… Carrots and oatmeal. But I’ll give it a try. Worse comes to worse, that would be my first and last time eating it.”
I.was.WRONG!!!! It was delicious! It’s totally not weird at all.
Well… It’s not exactly cake CAKE per se. But I guess it’s the spices you expect to get from carrot cakes.
1/4 cup grated carrots
1/2 cup oatmeal, dry
1 cup almond milk
1/2 cup water
1/2 tsp vanilla extract
1/4 tsp cinnamon
a dash of nutmeg
1. Bring everything to boil, except oatmeal.
2. Add oatmeal, and cook until the liquids are absorbed
It’s a great way to add vegetable to your breakfast.
I topped mine with yogurt “frosting” and walnuts. The frosting is just a mixture of unsweetened soy yogurt and maple syrup. Maybe next time I’ll replace the walnuts with raisins. Mmmm!
