When we can cover something in chocolate and still know that it’s healthy, we’re a happy team! We’ve had kiwis in salads and cakes. But chocolate covered? Why not!? 😉
1 cup dark chocolate, chopped
1/2 cup coconut oil, melted
1. Combine dark chocolate and coconut oil in a double boiler (or a big bowl in a pot of water under low heat). Let the chocolate liquify, and let it cool to room temperature.
2. Peel and slice kiwis into about 1 inch thick. Stick popsicle sticks and freeze for at least 1 hour.
3. Dip each Kiwi-pop into the chocolate mixture (it will immediately turn crispy) and refreeze.
Other than dipping fresh fruits, you can try it with nuts (almond, cashews, hazelnuts, walnuts), dried fruits (figs, coconut), candied orange slices, candied ginger, and so on.
