I have quite a few of coconut flour, that I have no idea what to use them for. So this morning I decided to make myself some pancakes. Coconut pancakes!
100 g coconut flour
1/4 tablespoon baking powder (gluten free if wanted)
7 egg whites
1 cup coconut milk
3 tbs honey
1 tsp cinnamon
makes about 10 little pancakes
1. Put all ingredients in a bowl and mix
2. Set a side for 15 minutes
3. Mix all again
4. Heat up a non stick frying pan and put a heaping spoonful of the mixture in. Cook for a few minutes on medium-low heat and turn. Cook the other side until golden brown.
You can add toppings like blueberries, or yogurt, or honey. Bon appétit!
