Dark Chocolate Oat Banana Muffin

My friends and I were thinking of exchanging chocolates for Valentine’s Day. I decided, rather than buying a box for everyone, maybe I can make something. I found this recipe for chocolate muffins and decided to make them for my friends.

2 egg whites
2 tbs honey
1 medium banana, ripe
3/4 cup applesauce
1/4 cup unsweetened coconut milk
1 tsp vanilla paste
1/3 cup unsweetened cocoa powder
1 cup + 2 tbsp of oat flour or whole wheat pastry flour
1 tsp baking powder

makes 7 muffins
1. Mix egg white, bananas, applesauce, milk and vanilla extract.

2. Mix in cocoa powder, flour and baking powder.

3. Spray muffin tin and bake at 350 for 18-20 minutes.

It’s absolutely delicious!!! Btw, applesauce is a substitute for oil in baking. And you can make your own applesauce. It’s so easy!
