Espresso & Oat Truffles

I’ve been wanting to make homemade truffles for awhile now. I thought it was going to be difficult. But I was wrong! It’s so quick and easy.

15 pitted dates
4 tbs rolled oats
2 tbs shredded coconut
2 tbs coconut oil
2 tbs cacao powder
1/2 tsp vanilla extract
1 shot espresso

makes 6-8 truffles
1. Mix everything in a food processor then refrigerate for about 10 mins.

2. Form into small round truffles with your hands and roll them on cocoa powder, shredded coconuts, or chopped almonds.

3. Refrigerate for minutes before serving.

Adult sweets at its best! Soft and crunchy with a hint of coffee. Plus, it’s a perfect gift or simply as a midday snack.
