Espresso & Oat Truffles

Soft and crunchy with a hint of coffee. Plus, it’s a perfect gift! For Valentine’s? Maybe? 😉

Ingredients (makes 6-8 truffles)
15 pitted dates
4 tbs rolled oats
2 tbs shredded coconut
2 tbs coconut oil
2 tbs cacao powder
1/2 tsp vanilla extract
1 shot espresso

1. Mix everything in a food processor then refrigerate for about 10 mins.

2. Form into small round truffles with your hands and roll them on cocoa powder, shredded coconuts, or chopped almonds.

3. Refrigerate for minutes before serving.

It’s a healthier option so you can eat more than usual.
