Green Pea Soup

The weather has been getting cold lately. And what’s better than a warm bowl of soup in a cold day?

So today, I made myself a bowl of green pea soup. I’ve never had green pea soup before, But it’s actually pretty good. Will definitely have them again!

1/2 tsp coconut oil
1 small onion
2 garlic cloves
1 dried Thai chili pepper
1/2 cup green peas, thawed
1 cup vegetable broth
Juice of a lemon wedge
100 ml coconut milk
1/4 tsp thyme
Salt and pepper to taste

1.Heat coconut oil in a pot.

2. Add onion, garlic, and chili pepper, and cook until fragrant and soft.

3. Add green peas and vegetable broth. Bring to a boil, then lower heat. Let it simmer for about 10 minutes.

4. Place half of the broth into a bowl or a cup. Add coconut milk and mix soup in a blender or food processor.

5. Add lemon juice and thyme. Add salt and pepper to taste

Simple and easy? 😉 Enjoy it with a loaf of bread for lunch. Bon appétit!
