Grilled Mushroom Sandwich

My mom thought that I only eat oatmeal for breakfast. So here’s to proof everyone that my breakfast isn’t JUST oatmeal lol.

2 slices whole wheat bread
1 cremini mushroom
1 tbs green onion
2 tbs coriander leaves, chopped
1 tbs grated parmesan cheese
2 egg whites
A bit of oil to coat the pan
Pepper to taste

serves 1
1. Heat a non stick pan with oil. Add mushroom and sauté until moisture has evaporated.

2. Add the egg, green onion, salt and pepper; sauté until egg is blended and cooked well into the mushrooms.

3. Turn off heat; add cheese and coriander leaves, mix and set aside.

4. Add mushroom mixture on one slice and cover with the other slice and grill using a sandwich maker or any other grilling method of your choice.
