As much as I love soy yogurt, it’s pretty hard to find a good one. I used to love Whole Soy & Co. until they discontinued it, or at least that’s what I think cause I could never find it. Not to mention, now that I’m back home, it’s three times as hard to find anything! So I decided to make my own “soy yogurt,” or more like tofu yogurt.
A blend of tofu and citrus. And maybe a tad of sweetener.
For some reason, tofu here is less filling compared to the ones in the US. I finished the entire thing with no problem. XD
10 oz. silk tofu
1 frozen banana, broken, slightly thawed
2 TBS almond milk
Juice of 1 lemon
2 TBS maple syrup (optional)
serves 1 – 2
Combine all ingredients in a food processor (or blender), and blend until smooth. Serve with your fruits or your favorite toppings.
