Oatmeal Pancake w/ Chocolate Sauce & Coconut Frosting

I’m so sorry I have been slacking on the food-porn!!! I have been quite lazy lately lol. Anyways, as I’ve said in my previous blog post, I’m reviving Pancake Sunday tradition again. So yesterday I made an oatmeal pancake with chocolate sauce and coconut frosting.

Yesterday was my total rest day. We were supposed to go hiking, but my body was exhausted! And I do listen to my body. So a rest day it was! Accompanied with morning pancakes. ;]

Ingredients
Pancakes
1/4 rolled oats, dry
3 egg whites
1/4 cup plain yogurt
1 tsp baking powder

Chocolate Sauce
2 tbs unsweetened cocoa powder
1 tbs chocolate protein powder
A few drops of stevia
A little bit of water to mix
1 tsp vanilla extract

Coconut Frosting
1 tbs shredded coconut
1/2 tbs coconut flour
1/4 tsp maple extract
A few drops of stevia
A little bit of almond milk to mix

serves 1
Pancake
1. Mix all the pancake ingredients in a food processor.

2. Heat a non-stick pan on medium. When pan is hot, pour about 2 tbs batter on the pan. When the pancake starts bubbling on the top, flip, and cook for about 30 seconds – 1 minute.

Chocolate Sauce
Mix all the ingredients of the sauce, add water slowly while stirring, until the mixture turns into a thick liquidy texture.

Coconut Frosting
1. Mix all ingredients for the frosting. Add almond milk slowly until mixture becomes thick; not runny.

2. Assemble pancake by spreading chocolate sauce on one layer, then top it with another pancake, and spread chocolate sauce on it. Repeat. Spread coconut frosting on the top layer.

3. Top it with berries, or fruits, or sprinkle some cocoa powder.
