Overnight Pumpkin Pie Oats

We swear that a healthy breakfast couldn’t get any more easier than this. Since there’s an abundance of pumpkin everywhere at the moment, we take the liberty of making a pumpkin pie breakfast. Preparing this shouldn’t take more than 10 minutes of your time. Do it before you go to bed, and it’s ready to it in when you wake up in the morning.

INGREDIENTS
1/2 cup rolled oats
½ cup almond milk
3-4 TBSP pumpkin puree
1/2 tsp. cinnamon
1/8th tsp. nutmeg
1/8th tsp. pumpkin spice
1 tbs. maple syrup or other sweeteners
chopped pecans, walnuts, or shredded coconut, to taste

1. In a a bowl, combine all ingredients, except chopped nuts. Refrigerate overnight.

2. Take it out in the morning.

3. Layer the oats with yogurt, top with whipped cream and chopped nuts.

The idea is to slowly rehydrate the oats overnight in the fridge so that it is ready to eat in the morning.
