Pistachio Avocado Ice Cream

Where’s the sun!?!?!?

It’s so dark outside, and wet, making me not want to leave my bed. This will be the perfect day to be lazy. But I had to get up. I had an early start for the day. We’ll be going to Maine!!! Woohoo!!!  I know I’ve been there like a bazillion times. But I’m still excited about it! Before that, I have to a couple, or a lot, of things to do. Starting with… breakfast~


I love pre-made breakfast, especially when it seems like you have to go as soon as you open your eyes. Lucky me, I made ice cream let night. Yes! I had ice cream for breakfast!


I don’t know about you, but I have this obsession with chunky… stuff. Chunky peanut butter, chunky ice cream, CHUNKY MONKEY! Usually you blend everything until smooth and creamy. I like mine to be, of course, chunky. So I blended them for less time, giving me that pistachio crunch.



2 ripe avocados
1/4 cup pistachio
3 TBS maple syrup
1 tsp vanilla extract

serves 2-3
Put everything into a blender, and blend well until creamy. I blended mine a little less, so I have a chunky pistachio ice cream. 🙂

I can easily finish the whole thing by myself. Ha! But… Let’s not =] And I don’t really understand why some people are afraid of eating avocado. They are delicious and healthy. Most of the times, they’re ok being paired up with other things. Great sub for mayo by the way!
