Protein Carrot Cake Pancake


Sunday was usually a pancake day for me and my boyfriend. And then the tradition was changed somehow. So maybe I can revive that tradition?

This morning I made an Easter themed pancake. CARROT CAKE!!! With actual carrots in it =p I have trouble finding carrot cakes in stores that have actual carrots in it.

1/4 cup rolled oats
1/4 yogurt (I used soy yogurt)
1/4 cup shredded carrots
1 egg white
1 whole egg
1/2 tsp vanilla extract
1/4 tsp cinnamon
1/2 tbs honey
A dash of nutmeg

1/2 scoop vanilla protein powder
1/4 cup yogurt
1 tbs maple syrup

serves 1
1. Mix all pancake ingredients in a food processor.

2. Heat up non-stick pan.

3. Pour batter and cook over medium heat. When you see bubbles forming, flip and cook for about 30 seconds.

4. Mix all frosting ingredients together.

5. Smear about 1 tbs of frosting on a pancake. Put another layer of pancake on top. Repeat. Sprinkle with cinnamon or other toppings.

It’s so moist and yummy! I think nuts would be a good topping too!
