I remember those days when I was in college, and all I ate was pretty much instant noodles and eggs. Actually, I kind of think instant noodles are college kids’ staple food. It’s fast, cheap, easy, and delicious!
Okay, the reason we say Ramen Pancake when it looks more like an omelette is because this dish is originally called Martabak Mie. And the direct translation would be martabak = pancake, and mie = noodle. So yeah, Ramen Pancake sounds about right.
This recipe is actually from East Java, Indonesia. It’s a way to give your instant noodles some sort of a twist.
1 instant noodles
2 eggs, beaten
1 green onions
1 chili pepper, seeds removed, sliced
Enough oil to cook the pancake1. Cook the noodles in boiling water. Drain water.
2. Mix cooked noodles with beaten eggs, green onion, and noodles seasoning. Mix well.
3. Heat oil on a pan, sautee scallion and chili pepper until fragrant. Remove from pan and mix with noodles mixture
4. Put everything in a non-stick pan. Cook until brown on both sides.
5. Slice. Serve with chili sauce and pickled cucumber.
