For the past few weeks, I’ve been craving waffles! So the other day, I went out and get a waffle iron. Yes. It’s gotten to that point. =p And I’m ready for a waffle partay!!!!
So I went to my best friend’s house, and that was pretty much what we did. A whole bunch of waffle experiments =]
3/4 cup + 2 TBS spelt flour
1/2 cup + 2 TBS unsweetened almond milk + 1/2 tsp apple cider vinegar
1/4 cup rolled oats
2 TBS coconut oil
2 TBS maple syrup (or honey if not vegan)
1 tsp vanilla extract
1 tsp baking powder
A pinch sea salt
1. Mix the almond milk with apple cider vinegar. Let it sit for a couple of minutes for it to curdle. Then add your maple syrup, coconut oil, and vanilla extract, set aside.
2. In a separate bowl, whisk in spelt flour, rolled oats, baking powder, and sea salt. Create a well in the middle, and pour in the wet ingredients. Whisk until combined. You can taste-test the batter, and add more sweetness if you’d like.
3. Preheat your waffle iron/waffle maker. Once it’s ready, brush it with coconut oil. Pour about 1/3 – 1/2 cup batter, and cook according to the direction of your waffle maker. Remove, and place on a cooling rack. Serve, and top with berries, or drizzle with maple syrup, or honey, or even chocolate sauce 😉
