HAPPY PANCAKE DAY EVERYONE!!!! I love pancake! I’ve been trying to come up with a clean pancake recipe. And today I did it!
I’ve hardly ever had savory pancake. So this morning, I tried it. Maybe for the second time?
3/4 cup rolled oatmeal, dry
2 handful baby spinach
4 egg whites
2 tbs ricotta cheese
1 stick of string cheese
1. Boil about 3 cups of water. When the water is boiled, put baby spinach in boiled water for about 10 seconds, drain. Dip in cold water. Drain, and squeeze the water off the spinach.
2. In a food processor, mix spinach and egg whites. Then add the rest of the ingredients.
3. Brush a non-stick pan with olive oil, or spray lightly. Place on tablespoon of batter on the pan, and cook on medium heat. Flip the pancake when the bottom turns slightly golden brown.
4. Serve with any toppings you like!
