You know how I love breakfast. But lately I’ve been struggling, coming up with new breakfast recipes. It’s too cold for overnight stuff. And too lazy or not enough time to cook in the morning. But this morning, I decided to cook! I woke up earlier, did my workout, and cooked breakfast!
And here it is… A simple warm quinoa pudding.
1/3 cup tri-color quinoa
1/2 cup almond milk
2/3 cup water
1/2 banana, sliced
1/2 tsp vanilla
A dash of cinnamon
1/3 cup blueberries
1. Rinse quinoa with water.
2. Place the quinoa in a medium pot with the almond milk, water, and banana. Bring to a boil over medium-high heat, then mix in vanilla and cinnamon.
3. Reduce the heat to a simmer, and cover the sauce pan with a lid. Cook the mixture for 10-15 minute.
The quinoa should have a crunch, but not hard to chew.
4. Remove from heat and stir in blueberries and nuts.
